  • Jacques Perritaz named his ciderie after the Vulcain butterflies (as illustrated by Gisèle Rime) that flutter above the orchards of Fribourg at harvest time. Crafting his cuvées exclusively from local fruit, Jacques ferments with only wild yeasts. Light filtering and sulfuring results in a cider that floats like its namesake and, with a refreshing touch of acidity, stings like a (honey) bee.
