  • Named for the 13th century doctor who discovered mutage, the process in which neutral grape spirit is added to a fermenting wine, this cooperative of over 350 growers produces, sources, ages, preserves and celebrates the long-lived Vin Doux Naturels of the Roussillon. Their 1985 Rivesaltes was matured for 10 years in cement and another 17 years in barrel before bottling in 2012.
