Bouzeron is the only appellation for Burgundy's other white grape, Aligoté. While A.O.C. limits yields to 45 hl/ha, de Villaine controls theirs through selective planting, severe pruning and thinning, resulting in yields 20% lower than required. This non-greedy approach is one reason they produce such terrior-driven and complex wines. Chardonnay need not apply.
