- Originally established in 1899 in Asahikawa City in Hokkaido, Takasago is not only the oldest sakagura in the area, it is the only brewery in Japan to build an "Ice Dome", or igloo to press their daiginjo once temperatures hit 14 degrees. It also employs "drip" pressing, a laborious process that relies solely on gravity to extract their sake. Divine droplets, indeed.
