- Straddling either side of the Alps are the world's only two protected designations for Vermouth. In France, it's Chambery. In Italy, Torino. The House of Cocchi created their Dopo Teatro (After Theatre) Amaro Vermouth by adding some Barolo Chinato to the base wine of their original (circa 1891) recipe. An "evening" Vermouth, it's best drunk cool, with a twist of zesty lemon.
